This experiment is carried out to study the properties of carbohydrates and to determine the identity of unknown carbohydrate solutions by carrying out a series of chemical reactions. In this experiment, three unknown carbohydrate solutions and starch solution are given.

Carbohydrate is a class of organic compound mainly referred as sugars. The general chemical formula is C n (H2O) n. Carbohydrates can be classified as monosaccharides, disaccharides, polysaccharides, and oligosaccharides. They are chemically aldehydes or ketones.

Monosachharides include glucose, fructose, galactose, ribose and many more. The formation of two monosachharides will form disaccharides which includes maltose, lactose and sucrose. Cellulose and starch are in the category of polysachharides.
